Manzanilla Manzanilla can only be made in Sanlucar de Barrameda where the veil of flor - which imparts its unique flavours - grows thickest. The youthful, classic style is the lightest, palest and most delicate of all Sherries. Cellared next to the sea, it is characterised by a distinctive salty tang and vibrant acidity. |

Amontillado If Fino is left to age, the flor will gradually consume nutrients in the wine until it can no longer replenish itself. Once the flor dies, the old Fino will begin to oxidize (and evaporate, raising the alcohol). The result, Amontillado, gradually darkens in colour and takes on a perfumed nutty character. |

Oloroso Meaning 'fragrant' in Spanish, a good Oloroso will be intensely aromatic in a way that is similar to an Amontillado, yet more rounded. Unlike an Amontillado, however, which has a sense of lightness imparted by its development as a Fino, Oloroso is richer and develops further viscosity with age. Bottled dry, as these are, they make particularly fine matches for richly flavoured foods. |
